Texas BBQ: Mustang Creek’s Bohemian Sandwich-Brisket and Sausage Goodness

I recently did an assignment for Men’s Health Magazine that sent me to a few places that I wouldn’t have associated with health – but damn, the food was fantastic. One of those places was Mustang Creek BBQ in Louise, Texas. It’s about a two-hour drive southwest of Houston, and it sits along a quiet stretch of the road. The interesting fact about this part of Highway 59 is that there are 2-3 excellent smokehouses within thirty minutes of Mustang Creek. So as you make your pilgrimage to check out Mustang Creek, you can hit up a few more places as part of your Hwy 59 smoked meat tour, including Vincek’s Smokehouse, Junior’s Smokehouse, and Prasek’s Hillje Smokehouse.

Mustang Creek is pretty unassuming. You might miss the old gas-station-turned-BBQ-joint, but if you hit it at the right time of day, lunchtime, you see all the big Texas trucks parked out front. That’s a good sign – Texans know their BBQ, and if there are tons of trucks, it’s like a mark of approval. I spent the morning with the cooks and pit master at Mustang Creek. I got there as early as I could and hung out with the pit master as he smoked an entire pit full of brisket, sausage and chicken. The main reason I was there was to check out the Bohemian sandwich. It’s massive, loaded with a generous amount of brisket and Prasek’s smoked sausage, topped with a few thick slices of white onion and pickles, and all piled on a standard soft white bread bun.  The combination of the smoky brisket and the spicy sausage with a hint of onion makes for a nice bite; the flavors fill your mouth and you just want more. Hungry, yet? The picture I made is a good illustration of how it comes. It’s that big and it does taste as good as it looks. Start your cars, people…this one’s worth the haul.

    Use to live in Houston, Tx., many yrs. ago. Look forward to going back that way soon, and by the appearance of these delicious looking pictures….if a picture can be delicious looking….these are….I will make sure we stop and visit at Mustang Creek BBS in Louise, Tx. Now that we are retired we spend our summers in the mountains of Blairsville, Ga. and our winters in Pt. St. Lucie, Fl. We love BBQ. I will tell you if you are ever in this area of Blairsville, Ga…..then look up Bubba’s. It’s mighty-good-BBQ. CAN’T WAIT UNTIL WE VISIT MUSTANG CREEK!!! I will be out that way this next year on a book tour, which is in the arrangement dept. at this time.     Is it healthy? Not really. Does it make your taste buds expire in delight? Oh yes. Yes it does. I love Texas BBQ. You know why it’s so great? Because Texas reveres meat like no other state ever dreamed of. If you get a chance you need to try the Salt Lick in Round Rock. Superb!

    Penny, you nailed it. I got teary-eyed looking at these photos! Makes me miss everything that is good about Texas. I can remember riding in the back of my daddy’s pickup to the barbecue place and eating this exact combination of flavors-brisket, sausage, pickles, onions, and white bread. Never thought to put it all on one sandwich, but I guess someone did! I miss that smell of a room with wood paneling that has been smoke-infused for years. Thanks for taking me back. If I lean in any closer to the monitor, I’m going to have to go wash my hair to get the smoke smell out:-)

    Thank you for posting about this place. I grew up in El Campo, Texas. It’s about 10 mins North of Louise and have eaten here often. I read a lot about food and Texas BBQ and I hate that this place never is ever talked about. It is amazing, their ribs are amazing and I eat there as often as I can when I visit as well as I enjoy the Mexican food of this part of Texas. So thank you for representing us, it is appreciated!
